  • white sugar
  • brown sugar
  • eggs (room temperature if possible)
  • vanilla extract
  • all purpose flour
  • baking soda
  • salt
  • sour cream, greek yogurt, or buttermilk
  • 3 large over-ripe bananas, mashed (the best bananas for this recipe have plenty of brown spots!)
  • 1 cup of chocolate chunks

Supplies needed:

The Process:

  • Prepare the Pan: Preheat your oven and prepare a loaf pan with either cooking spray, butter, or a parchment paper lining
  • Mix the Wet Ingredients: In a large mixing bowl, beat the melted butter and sugars together until well combined. Add the eggs, one at a time, mixing well after each addition. Fold in in the sour cream and vanilla extract until smooth.
  • Add dry ingredients: Sprinkle the flour, baking soda and salt over the wet ingredients and stir to combine. Add the mashed bananas and mix until just combined. Be careful not to over-mix, as this can make the bread tough.
  • Add the Chocolate: Fold in the dark chocolate chunks.

  • Bake: Pour the batter into the prepared loaf pan, smoothing the top. Sprinkle a few chunks of chocolate on the top of the batter if you’d like. Bake in the preheated oven for  about 60 minutes, or until a toothpick inserted into the center of the banana bread comes out with a few moist crumbs.
  • Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. This helps the bread set and makes it easier to slice.

Storing & Serving

  • 1 stick of butter, melted (1/2 cup)
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda1 stick of butter, melted (1/2 cup)

  • 1 1/2 cups all purpose flour

  • 1/2 cup of sour cream or greek yogurt*
  • 3 very ripe bananas, mashed (I usually use medium-large sized ones)
  • 8 oz or 1 cup of chocolate chunks (any type of chocolate works,) or chocolate chips

Instructions

Preheat oven to 350F. Grease or spray a 9 inch loaf pan, set aside

In a large bowl whisk together the melted butter, and sugars. Add the eggs one and a time and vanilla and whisk until smooth.

Sprinkle the flour, baking soda and salt over the butter mixture and stir to mix until just combined. Fold in the bananas and sour cream. Fold in the chocolate saving a few pieces to sprinkle over the top if desired.

Pour batter into prepared pan and bake 60 minutes or until crust is golden brown and a toothpick inserted into the center comes out clean. Cool until warm before serving.

Notes

I have used sour cream, greek yogurt, regular yogurt and buttermilk in this recipe and they all yield awesome results. I usually heap the sour cream into the measuring cup so it's just a little over-full.
